From Douarnenez in Brittany comes this wonderful assortment of sardines. Perfect, fresh smelling, mild tasting and firm, according to the Sardine Society, exactly the type of tin one brings on a proselytizing mission to convert the Sardine-averse!

French Sardines are harvested between April 1st and October 31st, when sardines have reached they full maturity and are the most tasteful. Sardines fishermen use a special technique called bolinche, using a small spinning fishing net to avoid the fish being smashed. After being caught, sardines are kept alive onboard in refrigerated water tanks.

They are taken back to the pier within 12 hours and labeled, ready to be canned less than 24 hours after the catch to guarantee an unsurpassed freshness.
